Pork stew with dried apricots

A good, hearty stew that is nevertheless original!

Instructions

  • 1.   Before starting, read all the steps, gather the necessary ingredients and utensils, and rinse the fruits and vegetables!
  • 2.   Bring a pot of water to a boil to cook the bulgur. When the water boils, cook it for 10 minutes until tender (taste to check). Stir occasionally. Once cooked, drain it and return it to the pot. Season with salt and pepper. Cover to keep warm.
  • 3.   In a sauté pan, heat a drizzle of olive oil over medium-high heat. Peel and slice the yellow onion. Cut and remove the base and the dry, damaged end of the leek. Cut it in half lengthwise and rinse it thoroughly. Cut it into thin strips. Brown the onion, leek, and sausage meat for 3 minutes. Cut the apricots into small pieces. After 3 minutes of cooking the vegetables and sausage meat, add the apricots and water. Cover and cook for 8 to 10 minutes. Add water if necessary. Season lightly with salt and pepper.
  • 4.   Chop the coriander.
  • 5.   Serve the pork stew with dried apricots sprinkled with coriander.

  • 3 sprig of fresh coriander
  • 180 g of sausage meat
  • 100 g of dried apricot
  • 240 g of leek
  • 1 olive oil
  • 300 ml of water
  • salt (according to taste)
  • pepper (according to taste)
