Instructions

  • 1.   Preheat your oven to 220°C on convection mode!
  • 2.   Place the chicken thighs in an ovenproof dish. Sprinkle with cumin. Drizzle with olive oil. Season with salt and pepper and bake for 20 minutes.
  • 3.   Peel and cut the potatoes into pieces. Add the potatoes to the chicken dish. Drizzle with olive oil. Season with salt and pepper and mix well to coat everything. Bake for about 25 minutes until the chicken is cooked through.
  • 4.   Bring a pot of salted water to a boil. Cook the bulgur according to the package instructions. Once cooked, drain and let it cool to room temperature.
  • 5.   In a bowl, combine chopped mint, sliced spring onion, chopped walnuts, Greek yogurt, olive oil, and cooled bulgur. Season with salt and pepper and mix well. Adjust the seasoning if necessary.
  • 6.   Enjoy your chicken thigh with cumin accompanied by the keshe and roasted potatoes without delay!
