Green Scottish salmon ceviche

To be enjoyed as an appetizer or starter, on toasted bread slices, this green Scottish salmon ceviche is an easy and refreshing delight.

Instructions

  • 1.   Wash and slice the green onions, wash and chop the aromatic herbs. Wash, zest, and squeeze the limes.
  • 2.   Mix the lime juice in a bowl with salt, Espelette pepper, and olive oil.
  • 3.   Cut the salmon into cubes, mix them in a bowl with all the herbs, green onions, and lime sauce. Place the ceviche in the refrigerator for 20 minutes before enjoying it on toasted bread slices.

  • 600 g of salmon fillet
  • 4 chives
  • 4 sprig of fresh chervil
  • 6 leaf of basil
  • 6 stalk of fresh coriander
  • 2 limes
  • 5 cl of olive oil
  • 1 pinch of Espelette pepper
  • salt (according to taste)
