Barbecue Ribs

Instructions

  • 1.   Start by preparing the ribs by removing the transparent film from the bone side.
    Coat the ribs with olive oil, massaging the meat on all sides.
  • 2.   Apply the "Rub" spices to the ribs and wrap them in plastic wrap, then refrigerate for 24 hours.
  • 3.   Once the barbecue is at the right temperature, place the ribs for smoking, usually for 3 hours.
  • 4.   Prepare aluminum foil to wrap the ribs, place pieces of butter on it.
    Place the ribs bone side down, then drizzle with agave syrup and a small glass of apple juice.
    Close it tightly to prevent the juice from leaking.
    Place the ribs back on the barbecue for 2 hours.
  • 5.   Remove the ribs from the aluminum foil, keeping the juice.
    Then put the ribs back on the barbecue for an hour, regularly basting them with the previously collected juice.
  • 6.   Remove the ribs from the barbecue 10 minutes before serving, allowing them to cool down slowly.

  • 400 g of ribs
  • 3 tablespoon of agave syrup
  • 1 liter of apple juice
  • 30 g of butter
  • 5 cl of olive oil
  • Rub à frotter :
  • 3 tablespoon of garlic powder
  • 3 tablespoon of ground cumin
  • 3 tablespoon of turmeric powder
  • 3 tablespoon of ginger paste
  • 3 pinch of salt
