Instructions

  • 1.   Brown the chicken thighs in a frying pan.
  • 2.   Add the coconut milk, tomato paste, salt, and pepper.
  • 3.   Simmer covered for 20 minutes, then add the rinsed and drained red beans.
  • 4.   Continue cooking for 10-15 minutes. Check the doneness of the chicken before serving.
