Zucchini Waffles with Smoked Trout and Yogurt Sauce

Instructions

  • 1.   Peel and grate the zucchini using a food processor. Place the grated zucchini in a dry and clean towel to remove as much water as possible. Press firmly.
  • 2.   In a large bowl, mix the squeezed grated zucchini, egg, whole wheat flour until you obtain a homogeneous batter. You can also add 1 grated carrot to the batter mixture.
  • 3.   Then, cook the waffles in your waffle maker. Remember to oil the walls with a drizzle of olive oil to prevent the waffles from sticking. The cooking time varies depending on the appliance, approximately 3 minutes for both sides.
  • 4.   For the filling, anything is possible! I love adding organic smoked trout (or salmon) and a yogurt sauce.
  • 5.   For the yogurt sauce, mix the yogurt directly in the container with a drizzle of lemon juice, 1 pinch of salt and pepper, and chopped chives (or cilantro). Serve on a bed of spinach.

  • 4 slice of smoked trout
  • 1 handful of fresh spinach
  • 1 yogurt
  • 1 sprig of chives
  • salt (according to taste)
  • pepper (according to taste)
