1. Preheat your oven to 200°C (400°F), gas mark 6/7.
2. Place the shortcrust pastry in a buttered pie dish and prick the bottom with a fork.
3. In a frying pan, brown the bacon bits.
4. Meanwhile, mix the whole eggs (yolks and whites) with the heavy cream and grated gruyère cheese.
5. Add the bacon bits to the mixture, season with pepper, and add a pinch of grated nutmeg.
6. Pour everything into the pie dish, on top of the pastry, then bake for 30 minutes.
