Lamb shanks with caramelized shallots

Instructions

  • 1.   Start this lamb shanks recipe by peeling the shallots. Keep them whole.
  • 2.   In a Dutch oven, brown the lamb shanks on each side in 3 tablespoons of olive oil. Remove the meat, add the butter and sauté the shallots for 5 minutes over high heat, add the spices and mix.
  • 3.   Pour in the cider and maple syrup. Mix and return the meat to the pot. Cover and let cook over low heat for 1 hour and 20 minutes. Add the chickpeas (drained if canned) and continue cooking for an additional 10 minutes. Season with salt and pepper, and enjoy!

  • 2 tablespoon of maple syrup
  • 20 g of butter
  • 20 cl of cider
  • 1 teaspoon of four spices

  • 1 teaspoon of coriander seed
  • salt (according to taste)
  • pepper (according to taste)
