1. Preheat the oven to 200°C (400°F). Place the fries on a baking sheet lined with parchment paper and bake for the cooking time indicated on the package.
2. Finely chop the parsley.
3. In a bowl, add the parsley, oregano, grated garlic, cumin, red wine vinegar, oil, and lemon juice. Season with salt and pepper, and mix well.
4. Peel and dice the avocado. Add it to the chimichurri sauce. Set aside.
5. In a skillet, add a knob of butter. Cook the steak over high heat for 2 minutes on each side for a rare cooking. Season with salt and pepper on each side.
6. Slice the steak if desired.
7. Remove the fries from the oven. Plate your dish and serve it with the avocado chimichurri sauce. It's ready!
