Avocado chimichurri steak sauce & fries

The steak fries take on the colors of Argentina with this avocado chimichurri sauce!

Instructions

  • 1.   Preheat the oven to 200°C (400°F). Place the fries on a baking sheet lined with parchment paper and bake for the cooking time indicated on the package.
  • 2.   Finely chop the parsley.
  • 3.   In a bowl, add the parsley, oregano, grated garlic, cumin, red wine vinegar, oil, and lemon juice. Season with salt and pepper, and mix well.
  • 4.   Peel and dice the avocado. Add it to the chimichurri sauce. Set aside.
  • 5.   In a skillet, add a knob of butter. Cook the steak over high heat for 2 minutes on each side for a rare cooking. Season with salt and pepper on each side.
  • 6.   Slice the steak if desired.
  • 7.   Remove the fries from the oven. Plate your dish and serve it with the avocado chimichurri sauce. It's ready!

  • 1 stalk of parsley
  • 1 pinch of dried onion
  • 1 garlic clove
  • 1 cup of ground cumin
  • 1 teaspoon of wine vinegar
  • 20 ml of rapeseed oil
  • ½ avocados
  • ½ Lemon sorbet
