1. Optional: if you have them, chop the shallots. Wash the mushrooms, then cut them into thin slices.
2. In a hot skillet, add a knob of butter, (optional: the shallots), and the mushrooms and sauté them over high heat, stirring regularly, until all the water released by the mushrooms has evaporated. Season with salt and pepper.
3. Once the mushrooms are nicely browned, remove them from the skillet and set them aside.
4. Add a knob of butter to the skillet and place a galette on top.
5. Crack an egg in the center, add some cheese on top, add torn pieces of ham, and distribute some of the sautéed mushrooms around.
6. Cook over medium heat for 3 minutes until the egg is cooked to your liking. Fold the galette in half or into a square, serve, and it's ready!
