1. Preheat the oven to 200°C (400°F). Peel the carrots, then cut them into diagonal slices.
2. Wash the potatoes, then add them to the baking sheet along with the carrots. Drizzle with olive oil. Season with salt and pepper, then mix with your hands. Bake for 20 minutes at 200°C (400°F).
3. Meanwhile, if your butter is not soft, soften it in a saucepan or in the microwave.
4. In a bowl, mix together the softened butter, Parmesan cheese, and breadcrumbs. Season with salt and pepper, then mix with your fingertips until you get a sandy texture.
5. After 20 minutes of cooking, remove the baking sheet from the oven and add the cod fillets*. Sprinkle the crumble mixture over the cod fillets. Bake for another 15 minutes at 200°C (400°F).

6. Serve the cod with Parmesan crust with the roasted vegetables and tartar sauce (optional). Sprinkle with chopped chives, if desired. It's ready!
