Instructions

  • 1.   Start this pork tenderloin papillote recipe by putting the coco beans and bouquet garni in a large pot of water. Bring to a boil and let cook for 35 minutes over medium heat. Drain them.
  • 2.   Preheat the oven to 180 °C (350 °F).
  • 3.   Remove the leaves from the herbs and finely chop them. Season with salt and pepper.
  • 4.   Place the pork tenderloin on a piece of parchment paper. Brush it with honey and then drizzle it with white wine and olive oil. Season with salt, pepper, and sprinkle the chopped herbs on top.
  • 5.   Seal the papillote tightly and bake for 30 minutes.
  • 6.   Open the papillote and add the Paimpol coco beans. Mix them well with the cooking juices. Season with salt and pepper, and serve immediately.
