Stir-fried beef noodles & sweet chili sauce with peanuts and stir-fried vegetables

Instructions

  • 1.   Boil plenty of water in a covered saucepan for the noodles. Heat 1/2 tbsp of sunflower oil in a wok or sauté pan over high heat. Cook the beef strips for 2 to 3 minutes over high heat and remove them from the wok.
  • 2.   Heat 1/2 tbsp of sunflower oil per person in the same wok over high heat. Add the ginger, garlic, and red chili mixture and the Asian vegetable mix and stir-fry for 2 to 3 minutes. Then add the chili sauce, sweet Asian sauce, and soy sauce, mix well, and cook for another 2 minutes. Season with salt and pepper to taste. Meanwhile, cut the lime into quarters and roughly crush the peanuts.
  • 3.   Meanwhile, add the noodles to the boiling water in the saucepan and cook them, covered, for 3 minutes until al dente. During cooking, separate the noodles with two forks. Drain them and let them rest without the lid. Add the beef strips and noodles to the wok and mix them with the vegetables and sauce for 1 minute.
  • 4.   Divide the noodles among the plates. Squeeze a piece of lime over each plate. Garnish with salted peanuts.
