Asian-style Vegetable Rösti with Zero Sugar & Low Glycemic Index

Instructions

. Finely grate the carrots and thinly slice the onions. Blanch the spinach in boiling water for 2 minutes.

. Mix the parmesan with the flour, then add the eggs one by one. Add all the vegetables and mix. Season with pepper, but do not add salt.

. In a hot pan greased with olive oil, pour the mixture into patties and cook on both sides.

. Serve with soy sauce, grated ginger, and sesame seeds for dipping.
