Bring a large pot of salted water to a boil and cook the green beans for 6 minutes. Drain them.
Meanwhile, sauté the bacon in a pan without any fat, then remove the excess fat from the pan and add the cream and parmesan.
Immediately pour the mixture over the green beans, season with pepper, and divide into 4 plates. Place 1 egg yolk on each plate.
