Instructions

  • 1.   Sauté the minced onion and crushed garlic with the veal sauté.
  • 2.   Once the veal and onions are well browned, add the peeled and sliced chorizo.
  • 3.   Add the tomato sauce, olives, bouquet garni, Espelette pepper, salt, and pepper.
  • 4.   Let simmer covered for a good hour.
  • 5.   Adjust the seasoning.
  • 6.   Serve with boiled potatoes or fresh pasta.

  • 12 pitted black olives
  • 1 large onion
