Brazilian Cheese Bread

Makes 40 balls

Instructions

  • 1.   First, heat the milk and oil in a saucepan, immediately turn off the heat as soon as it starts to boil (you will see some milk bubbles forming).
  • 2.   In a large bowl, mix together the tapioca starch and salt, then pour the contents of the saucepan into the bowl while it is still hot, mix well, first with a spoon and then with your hands.
  • 3.   Then add the grated cheese and a little bit of the cheese from the dish as well as 1 egg, continue to mix well.
  • 4.   Add the remaining cheese and check that the dough has a good texture, neither too greasy nor too dry.
  • 5.   If you find that it is too dry, add another egg, if it becomes greasy, add a little more tapioca starch.
  • 6.   This dough should come off the bowl and also off your hand.
  • 7.   Try the dough and see if it has enough salt, some people like to add a little more salt.
  • 8.   All that's left is to form balls and place them on the baking sheet, leaving a small space between each bread.
  • 9.   It is not necessary to grease the baking sheet.
  • 10.   Leave it in the oven at medium temperature (230°C) until it turns slightly golden.

Notes & Suggestions

  • 1 full plate (350 g) of semi-aged cheese and/or grated mozzarella (the more cheese, the more flavorful the bread will be)
