Easy Baked Dorade

Instructions

  • 1.   Sauté the chopped shallots and minced parsley in a knob of butter in a frying pan, without browning.
  • 2.   Add the milk and then the breadcrumbs. Crush well. The bread should soak up the milk and become a creamy paste. Then add the egg and mix well.
  • 3.   Place the dorade in a buttered ovenproof dish.
  • 4.   Stuff the fish (in place of the organs removed by the fishmonger).
  • 5.   Pour white wine over the fish and bake at 180°C (350°F) for about 45 minutes. Adjust the cooking time according to the size of the fish (ask the fishmonger).

  • 25 cl of dry white wine
