My stuffed chicken escalopes recipe

Instructions

  • 1.   Preheat the oven to 200 °C (400 °F).

    Cut the chicken breasts in half to create a pocket. Crush the olives with the goat cheese. Finely chop the tarragon and mix it with the Espelette pepper into the cheese mixture.
    Stuff the chicken breasts with the goat cheese mixture.

    Place each breast on a slice of ham and roll the ham around the chicken.
    Grease an ovenproof dish. Arrange the stuffed chicken breasts in the dish and bake for 15 to 20 minutes. Serve with a green salad.

  • 2 handful of pitted green olive
  • 2 sprig of fresh tarragon
  • 4 slice of cured ham
  • 1 pinch of Espelette pepper
  • 3 tablespoon of olive oil
