Low-GI Green Croque-burger

Instructions

  • 1.   The broccoli should be added raw to the mixture. When blended, it will cook faster in the pan and still maintain a slightly firm texture, similar to "Al dente".
    Mix the previously blended broccoli with eggs, cream, buckwheat flour, salt, and pepper.
  • 2.   Heat oil in a pan, then cook the mixture with cooking discs for about 5 minutes. Flip them, place some pieces of goat cheese on top, and let it melt.
  • 3.   Add ham, tomato, lettuce, and close with another disc.

Notes & Suggestions

  • Variation:
    1️⃣ You can use a classic or veggie patty for a real burger 😉.
    2️⃣ Add some guacamole inside for extra indulgence 🥑.
    3️⃣ Place a fried egg on top for a croque-madame 🍳

    Use the remaining broccoli in a soup for dinner.

  • ½ broccolis
  • 2 eggs
  • 5 cl of plant-based cream
  • 1 tablespoon of buckwheat flour
  • 1 tablespoon of olive oil
  • Garniture :
  • 50 g of fresh goat cheese
  • 2 slice of white ham
  • 2 slice of tomato
  • 2 leaf of lettuce
  • salt (according to taste)
  • pepper (according to taste)
