1. Heat a pot of salted boiling water. Trim the green beans if necessary, and plunge them into the boiling water for 10 minutes.
2. Meanwhile, cut the turkey into 2-3 cm slices.
3. Add the turkey slices to a container. Season with salt, pepper, sprinkle with paprika, and drizzle with olive oil. Mix well.
4. Thread the turkey slices onto skewers.
5. Once the green beans are cooked, drain them and set aside.
6. Sauté the skewers over low heat in a pan with a drizzle of olive oil for 10-12 minutes, turning them regularly.
7. Meanwhile, bring hot water to a boil. Pour the couscous into a container and pour the same volume of boiling water over it. Cover and let it swell.
8. Flip the skewers to cook them on the other side.
9. Fluff the couscous with a fork.
10. In a small container, mix the Greek yogurt with salt, pepper, and a drizzle of olive oil.
11. Remove the skewers from the heat.
12. On a plate, serve the couscous, green beans, and turkey skewers. Add a tablespoon of sauce and sprinkle with paprika. It's ready!
