Avocado and Potato Batbouts

Avocado and Potato Batbouts are delicious sandwiches that combine Mediterranean and North African flavors. These soft batbout bread rolls without semolina and filled are perfect for a snack, a light meal, or as an appetizer during Ramadan.

Instructions

  • 1.   In a mixing bowl, combine the flour, semolina, one tablespoon of salt, yeast, and water to make a smooth dough.
  • 2.   Knead for 10 minutes until the dough becomes smooth.
  • 3.   Let it rest for 30 minutes in a warm place.
  • 4.   Meanwhile, cook the potatoes in salted water for 30 minutes, then check their doneness with a knife.
  • 5.   Let them cool, then peel them.
  • 6.   Cut the potatoes into cubes.
  • 7.   Peel the avocado and egg, then cut them into small cubes.
  • 8.   Chop the onion and add it to the potato cubes.
  • 9.   Add the avocado, egg, oil, mayonnaise, spices, parsley, olives, and tuna. Mix well and set aside.
  • 10.   After the dough has risen, form balls, about 10 to 12 balls the size of an orange.
  • 11.   Place them on a tray and let them rise for 25 minutes.
  • 12.   Heat a skillet or a thick-bottomed pan and cook the mini batbouts.
  • 13.   Brown them on each side.
  • 14.   After cooking, open them halfway and fill them with the stuffing.

  • 200 g of fine wheat semolina
  • 1 tablespoon of salt
  • ½ glass of water
  • 1 avocado
  • 2 potatoes
  • 1 canned tuna in water (drained weight)
  • 100 g of olive
  • 2 eggs
  • 2 tablespoon of mayonnaise
  • 2 tablespoon of olive oil
  • 1 small onion
  • 1 tablespoon of parsley
  • 1 tablespoon of fresh baker's yeast
