Melon and Prosciutto Salad

A dry PDO ham that I love and that pairs very well with summer fruits. In addition to the melon, I add a few slices of nectarine or peach. The result is surprising and truly delicious. The trick to an ultra flavorful plate is to add a spring onion (or shallot or red onion) and plenty of fresh herbs. For the dressing, a drizzle of fruity olive oil, balsamic vinegar, and a touch of fleur de sel is enough to bring out all the flavors of your dish.

Instructions

  • 1.   Cut the tomatoes into quarters. Do the same with the nectarine.
  • 2.   Remove the seeds and peel the melon, then cut it into cubes.
  • 3.   Slice the spring onion. Finely chop the herbs.
  • 4.   In a small bowl, whisk together the olive oil, balsamic vinegar, fleur de sel, and pepper.
  • 5.   In a large salad bowl or on your serving plates, place a bed of mixed greens. Add the tomatoes, melon, nectarine, and sprinkle with spring onions.
  • 6.   Generously drizzle with the vinaigrette and finish by delicately placing the prosciutto on top.
    Enjoy immediately!
  • 7.   CHEF'S TIPS
    If you like, add some shavings of Parmesan or diced buffalo mozzarella.

    For even more flavor, collect the juice from the melon and mix it with the vinaigrette.

  • 4 slice of cured ham
  • 1 handful of mesclun
  • 2 beefsteak tomatoes
  • ½ melons
  • 1 nectarine
  • 1 green onion
  • 1 fresh basil
  • 1 fresh mint
  • 1 fresh chives
  • 20 g of olive oil
  • 1 tablespoon of balsamic vinegar
