Marinated Beef and Grilled Seasonal Vegetables

Instructions

  • 1.   Start this recipe for beef with grilled seasonal vegetables on the plancha by preparing the marinade. Peel the ginger and garlic, then finely chop them. Zest the lemon and squeeze the juice. Place the juice and zest in a bowl with the rest of the marinade ingredients. Emulsify vigorously.
  • 2.   Place the meat in a dish and coat it with the marinade. Flip the steaks several times, then cover the container with plastic wrap and refrigerate for at least 3 hours.
  • 3.   Cut the tomatoes in half and the zucchini lengthwise, then into large chunks. Drizzle them with a little olive oil and set aside at room temperature.
  • 4.   Preheat the plancha. Remove the steaks from the marinade and carefully remove all the ingredients from the sauce. Set the sauce aside.
  • 5.   Sear the meat on the plancha for 1 to 2 minutes per side, depending on the thickness of the meat, then immediately wrap it in plastic wrap or parchment paper and let it rest.
  • 6.   Grill the vegetables and, 1 minute before the end of cooking, deglaze with the remaining sauce. Serve the sliced meat, season with salt and pepper, and sprinkle with chervil leaves.
