1. Soak the noodles in cold water for 2 or 3 minutes, meanwhile, heat water in a large pot. Add salt.
2. Cut the chicken into thin strips, cut the onions in half and then into thin slices.
3. Cook the noodles for 3 minutes, drain them, rinse them, and add a little oil to prevent sticking.
4. Heat oil over high heat in a wok, stir-fry the chicken for 2 minutes, stirring frequently, then add the onions and cook for 1 to 2 minutes, stirring frequently as well.
5. Add the roughly chopped noodles and sesame oil, stir for 1 minute, then add the bean sprouts and, you guessed it... stir again for a minute and add a few spoonfuls of soy sauce.
6. Finish by adding the torn and chopped cilantro to the wok.
