Mussels and homemade fries

The invention of this dish is often attributed to Frédéric Krieger, also known as "Monsieur Fritz"; a German pioneer of chip stalls. He allegedly served mussels and fries for the first time in 1875, at the fairgrounds in Liège. Today, this popular recipe is emblematic of the cuisine of northern France and Belgium. It is even the specialty of the Braderie de Lille, where merchants compete to create the highest pile of shells!

Instructions

  • 1.   Start this mussels and fries recipe by sorting the shellfish: discard any broken or open mussels. Scrape them with a knife and rinse them several times. Let them drain well in a colander.
  • 2.   Peel and cut the potatoes into sticks. Rinse them with cold water and then dry them.
  • 3.   Fry them in oil at 185 °C for 5 minutes. Drain them on paper towels. Repeat the cooking process by frying them again in the oil at 185 °C for 5 minutes. Once cooked, season them with salt and cover them with aluminum foil.
  • 4.   Finely chop the onion and mince the garlic. Peel the carrot and cut it into small cubes, as well as the celery.
  • 5.   Sauté the onion, garlic, celery, and carrot in butter in a Dutch oven. Season with salt and pepper, and let them sweat for 5 minutes.
  • 6.   Add the bay leaf. Pour in the white wine. Bring to a boil and add the mussels. Cover and cook for 5 minutes until the mussels have opened.
  • 7.   Serve them immediately with the fries.

  • 1 carrot
  • 1 stalk of celery stalk
  • 1 onion
  • 2 garlic cloves
  • 30 g of butter
  • 50 cl of white wine
  • 1 leaf of bay leaf
  • 1 liter of frying oil
  • salt (according to taste)
  • pepper (according to taste)
