Easiest Lamb Colombo in the World

Imported to the Caribbean in the 19th century, curry became colombo. In contact with the islands, it took on all the flavors of the Caribbean.

Instructions

  • 1.   Ask your butcher to cut the meat into large cubes. Peel and slice the onions and garlic. Peel and dice the potato.
  • 2.   In a sauté pan, sauté the onions and garlic in oil until they become translucent. Add the meat and curry, mix well, then add the tomatoes and potatoes. Simmer for about 40 minutes, stirring occasionally.
  • 3.   When the colombo is cooked, add the coconut milk and cinnamon, mix and let cook for another 2 minutes.
  • 4.   Serve with basmati rice or chapatis and chutney.

  • 1 large canned peeled tomato
  • 1 large potato
  • 4 tablespoon of curry powder
  • 2 onions
  • 3 garlic cloves
  • 2 tablespoon of olive oil
  • 20 cl of coconut milk
  • 1 teaspoon of cinnamon
