Salmon and Apple Macedoine Salad, Egg Sauce

This salmon and apple macedoine recipe can be seasoned with Bulgarian yogurt sauce (whisked with mustard, lemon juice, dill, capers, salt, and pepper) or a simple roasted chicken jus. Delicious!

Instructions

  • 1.   Peel the potatoes, turnips, and carrots, then cut them into evenly sized cubes. Also dice the green beans. Cook them together in salted boiling water or steam. They should be tender but still slightly crunchy.
  • 2.   Boil 2 eggs in boiling water for 10 minutes. Peel them, cut them in half, and separate the whites from the yolks. Chop the yolks, keeping half for the sauce and the other half for the mimosa eggs.
  • 3.   The sauce: Mix the egg yolk with 1 of the chopped yolks and whisk vigorously. Lightly salt, pour in the lemon juice and mix, then add the mustard. While stirring continuously, pour in the oil gradually until you obtain a creamy texture. Season with pepper to taste, then gently incorporate the chopped onions, dill, and garlic.
  • 4.   Fill the hard-boiled eggs with a little sauce, sprinkle with the chopped yolk, and refrigerate them along with the remaining sauce.
  • 5.   Cut the beet into sticks and slice the apple thinly. Arrange them on plates with the cooked vegetable cubes and smoked salmon. Serve with the mimosa eggs and the sauce.

  • 2 yellow turnip

  • 3 handful of green bean
  • 2 medium potato
  • 1 cooked beetroot
  • 150 g of smoked salmon
  • 1 Granny Smith apple
  • 2 eggs
  • 2 green onions
  • 1 garlic clove
  • ½ lemons
  • 1 egg yolk
  • 1 tablespoon of mustard
  • 10 cl of rapeseed oil
  • 1 small dried dill
  • 1 pinch of flower of salt
  • 1 pinch of 5-pepper blend
  • salt (according to taste)
  • pepper (according to taste)
