Italian Panzanella Salad

Instructions

  • 1.   Cut the bread into cubes or crumble it roughly. Arrange it in a large shallow dish or a gratin dish. Mix vigorously 4 tablespoons of hazelnut oil with 3 tablespoons of vinegar and 6 tablespoons of cold water. Pour over the bread, season with salt and pepper to taste, and let it rest while preparing the salad.
  • 2.   Wash and slice the zucchini into rounds, then cut them in half. Sauté them for 4-5 minutes in a drizzle of olive oil over medium heat. They should be tender but still crunchy, "al dente".
  • 3.   The dressing: Finely chop the basil and set aside 1 tablespoon for the salad. Also chop the garlic and capers. Vigorously emulsify 4 tablespoons of olive oil and 1 tablespoon of vinegar, then add the chopped garlic, capers, and basil.
  • 4.   Wash the tomatoes and celery, then dice them. Slice the spring onion and celery leaves. Mix all the vegetables together with the olives, arugula, and the tablespoon of chopped basil.
  • 5.   When ready to serve, add the marinated bread to the salad, drizzle with the dressing, and mix thoroughly. Top with pancetta slices and enjoy.

  • 80 g of black olive
  • 4 handful of arugula
  • 12 slice of pancetta

  • 1 pinch of flower of salt
  • 1 pinch of 5-pepper blend
