Pork Tenderloin Basquaise

Instructions

  • 1.   Sear the pork tenderloin on all sides for 8 minutes in a sauté pan with a little olive oil, then remove and set aside in aluminum foil.
  • 2.   Slice the onion, garlic, and bell peppers, then sauté for 5 minutes in the same pan - deglaze with white wine, then add the tomato pulp and simmer for 10 minutes.
  • 3.   Cut the tenderloin into 2cm slices and add to the previous preparation, season with salt, pepper, add a few pinches of Espelette pepper, and sauté for about ten minutes.
  • 4.   Serve with whole grain basmati rice or any other whole grain rice.
