Calamari Languedoc Roussillon style

Instructions

  • 1.   Clean the calamari and slice them.
    Blanch them for 5 minutes in salted boiling water, then drain them.
    Slice the onions, clean the bell peppers and cut them lengthwise, peel and seed the tomatoes.
  • 2.   Sauté the sliced onions in oil for 2 minutes, then add the calamari, tomatoes, bell peppers, herbs, and parsley.
    Add dry white wine, season with salt and pepper.
  • 3.   Cover and simmer for 45 minutes.
    Sprinkle with chopped parsley before serving.
