Roman-style Gnocchi

Roman-style gnocchi, gnocchi made from durum wheat semolina cooked in milk before being baked in the oven.

Instructions

  • 1.   In a saucepan, bring the milk to a boil with 50 g of butter and a pinch of grated nutmeg. Add the wheat semolina and salt. Cook for 5 minutes. Let cool before adding the egg yolks and grated Parmesan cheese.
  • 2.   Place the mixture on a work surface and divide it in half. Shape two rolls with the two halves on parchment paper. Place them in the refrigerator for 1 hour. Cut the rolls with a cookie cutter.
  • 3.   Preheat the oven to 200°C (400°F). Arrange the gnocchi on a well-buttered gratin dish. Melt the remaining butter and pour it over the gnocchi. Sprinkle with Pecorino Romano cheese and bake for 20 minutes until golden brown. Serve hot. Buon appetito!

  • 60 g of grated parmesan
  • 60 g of Pecorino
  • 2 egg yolks
  • 1 pinch of nutmeg
