Instructions

  • 1.   In a pot of salted boiling water, cook the pasta until al dente. Drain.
  • 2.   Meanwhile, heat the oil over medium heat in a skillet. Brown the chicken and chopped onion for 2 to 3 minutes. Set aside.
  • 3.   In a saucepan, heat the cream cheese with the milk and goat cheese over medium heat. Stir until the cheeses are melted.
  • 4.   Stir in the chicken and onion mixture, pasta, baby spinach, and, if desired, basil. Season with salt and pepper. Heat for 2 to 3 minutes.
