Lentils with Sausage

Instructions

  • 1.   Cover the lentils with cold water in a saucepan. Bring to a boil quickly. Refresh them, drain them. Peel and chop carrot, onion, and garlic. Crush the tomato.
  • 2.   Heat 40 g of butter in a Dutch oven, sauté the chopped vegetables for 5 minutes, then add the tomato paste and diced tomato.
  • 3.   Add the lentils. Pour in the broth, lightly salt and pepper. Cover and let simmer for 20 minutes.
  • 4.   Prick the sausages with a fork, then brown them for about ten minutes in the remaining butter. Push them into the lentils and let simmer for another 10 minutes.
