1. Brown the bacon in a pan and add it to the endives.
2. Clean the endives, slice them, then sauté them with the 2 onions and bacon for about 10 minutes. Towards the end, add a little white wine and let it evaporate.
3. Spread the garlic-flavored Cancoillotte cheese on your pastry and arrange the endive/onion/bacon mixture on top.
4. Bake in a preheated oven at 200°C (400°F) for 30 minutes and serve warm, accompanied by a green salad.
