Teriyaki-style chicken strips with sautéed vegetables & basmati rice

Teriyaki sauce is an emblem of Japanese cuisine! This sauce comes from the word "Teri" which means "lustre" and "Yaki" which means "grill". It is usually used on meat pieces or skewers to bring a sweet and caramelized taste. Here, we cook it with chicken and sautéed vegetables, all sprinkled with gomasio to stay in the Japanese spirit and add crunchiness.

Instructions

  • 1.   Be sure to follow the quantities indicated on the left to prepare your recipe! Bring a pot of salted water to a boil and cook the rice for 12-14 minutes. Drain it and set it aside covered.
  • 2.   Meanwhile, cut the onion into thin half-moons. Peel and grate the carrot. Cut the leek into quarters, wash it well, then finely chop it. Heat a drizzle of olive oil over medium-high heat in a wok or sauté pan. Sauté the vegetables covered for 4-6 minutes. Stir regularly.
  • 3.   Meanwhile, finely chop the chives and garlic separately. Grate the ginger (if desired with the skin). In a bowl, mix the garlic and ginger with soy sauce (see TIP), sesame oil, and, per person: 1 tbsp of sugar and 30 ml of water. Cut the chicken into 3 strips.
  • 4.   Heat a drizzle of olive oil in a pan over medium-high heat and cook the chicken for 2-4 minutes. Add the sauce and let it reduce for 1-2 minutes over high heat, or until slightly thickened (add a little water if necessary). Serve the rice in shallow plates and arrange the vegetables and chicken on top with the sauce. Sprinkle with chives and gomasio.

  • 70 g of basmati rice
  • ½ onions
  • ½ carrots
  • ½ leeks
  • 2 g of chives
  • 1 garlic clove
  • 1 teaspoon of fresh ginger
  • 20 ml of soy sauce
  • 5 ml of sesame oil
  • 1 chicken breast
  • 1 tablespoon of olive oil
  • 1 tablespoon of sugar
  • 1 teaspoon of gomasio
  • salt (according to taste)
  • pepper (according to taste)
