Fresh Spaghetti with Smoked Trout and Chive Cream

Instructions

  • 1.   Leeks, onion, and smoked trout

    Slice the onion.
    Cut and remove the damaged base of the leek. Cut it in half lengthwise and rinse it thoroughly. Slice it.
    In a sauté pan, heat a drizzle of olive oil over medium-high heat.
    Sauté the onion and leek for about 10 minutes. Season with pepper.
    Suggestion: do not add salt, as the smoked trout already adds saltiness.
    Meanwhile, cut the smoked trout into pieces.
    After 10 minutes of cooking, add the smoked trout and a splash of water. Cover and continue cooking for an additional 5 minutes.
    Meanwhile, cook the spaghetti.

    The spaghetti

    Bring a pot of salted water to a boil.
    Cook the spaghetti for 2 to 3 minutes for al dente or tender pasta.
    Meanwhile, prepare the chive cream.

    The chive cream

    Press or mince the garlic.
    Squeeze the lemon.
    In a small saucepan, pour the cream and bring it to a boil.
    When the cream is boiling, add the garlic, a drizzle of lemon juice, and the chives. Season with salt and pepper. Continue cooking over low heat for about 2 minutes.
    Once everything is cooked, add the spaghetti and chive cream to the sauté pan with the vegetables.
    Mix well and heat over low heat for 1 minute, stirring regularly to coat everything.
    Taste and adjust the seasoning if necessary.
