Instructions

  • 1.   Start this cider pork roast recipe by peeling and slicing the onion. Heat the butter and a little oil in a casserole dish and brown the pork roast on high heat on all sides.
  • 2.   Remove it from the casserole dish, reduce the heat, add the onion and let it sweat for 5 minutes without browning. Put the roast back in, season with salt and pepper. Add the bouquet garni (thyme, bay leaf), 1 tablespoon of veal stock, and the peeled and pressed garlic. Pour in the cider and bring to a boil. Reduce the heat, cover, and simmer on low heat for 30 minutes.
  • 3.   Wash the apples, cut them into quarters, and remove the seeds. Add them to the casserole dish and continue cooking for 20 minutes. Serve hot.
