Turkey meatballs with peanuts and carrot puree

A dish loved by both kids and adults, and yet surprising thanks to the crunchy texture of peanuts.

Instructions

  • 1.   Peel the vegetables and cook them for 25 minutes in boiling salted water.
  • 2.   Coarsely chop the peanuts (I use the pulse function of the food processor several times). Set aside.
  • 3.   Cut the turkey into large pieces and put them in the bowl of the food processor with the soy sauce, salt, and pepper.
  • 4.   You can add a shallot if desired and herbs like tarragon that go well with turkey. Blend until smooth.
  • 5.   Pass the vegetables through a food mill, gradually adding the milk. Season with salt and pepper.
  • 6.   Dry the puree for a few minutes over low heat, incorporating the pieces of butter.
  • 7.   Shape small meatballs and roll them in the peanut breadcrumbs.
  • 8.   Skewer the meatballs on kebab sticks and serve immediately with the hot puree.
