Mustard Chicken with Tarragon and Mushrooms

Instructions

  • 1.   Sauté the shallots in olive oil for 3 minutes without browning.
  • 2.   Add the mushrooms and cook for 2 minutes.
  • 3.   Add the chicken broth. Cook for 10 minutes.
  • 4.   Sauté the chicken breasts in a non-stick skillet until golden.
  • 5.   Add them to the mushrooms and cook for 10 minutes.
  • 6.   Finally, remove the chicken, add the mustard, cream, and tarragon.
  • 7.   Slice the chicken breasts and serve with the mushrooms.
