Instructions

  • 1.   Be sure to follow the quantities indicated on the left to prepare your recipe! Preheat the oven to 220°C (200°C fan-forced). Take the butter out of the fridge. Wash and cut the potatoes into 1½ cm thick slices. Finely chop the garlic. Cut the onion into half-moons and the comté cheese into thin slices.
  • 2.   On a baking sheet lined with parchment paper, mix the potatoes with 2 tsp of paprika per person and a drizzle of olive oil. Season with salt and pepper. Place the bacon next to them. Bake for 8-10 minutes. Remove the baking sheet from the oven and set aside the bacon slices. Stir the potatoes and bake for an additional 10-12 minutes or until golden brown.
  • 3.   Sauté the butter and onion for 3-5 minutes in a skillet over medium-high heat. Deglaze with ½ tsp of white wine vinegar per person. Cover and let caramelize for 3-5 minutes over low heat, stirring often. Remove from the skillet and set aside. In a bowl, mix the honey, a drizzle of white wine vinegar, mayonnaise, and 1 tsp of mustard per person. Add half of the garlic, a pinch of paprika if any remains. Season with salt and pepper and mix well.
  • 4.   Cut the burger buns in half. Spread a little butter on each side. Bake for 4-6 minutes, with the buttered side down. In a salad bowl, mix ½ tsp of mustard per person with a drizzle of olive oil and white wine vinegar. Season with salt and pepper. Just before serving, add the arugula and mix.
  • 5.   In a bowl, mix the ground beef, remaining garlic, salt, and pepper. Shape it into patties (one per person) that are 1.5-2 cm thick. Brown them with a drizzle of olive oil for 2-3 minutes on each side in the skillet used for the onions, over medium-high heat. Place the comté cheese slices on each patty. Add 1 tbsp of water next to the meat and immediately cover. Turn off the heat and wait for the cheese to melt before serving.
  • 6.   Spread a little honey and mustard sauce on both sides of the bun. Place the caramelized onions on top. Then place a patty covered with comté cheese and the grilled bacon on top. Serve the salad, burger, and potatoes on plates and serve the remaining sauce on the side if desired.
