1. Slice a whole camembert in half lengthwise. Place the bottom half of the camembert in the center of a round puff pastry.
2. Peel and cook a potato in boiling salted water. Slice the cooked potato into thin rounds.
3. Finely dice an onion. Fry the onions and bacon bits in a pan.
4. Place a generous layer of fried onions and bacon bits on the bottom of the camembert.
5. Place a few potato rounds on top.
6. Close the camembert with the other half of the cheese.
7. Using the tip of a knife, cut the puff pastry into 8 sections (starting from the edge of the camembert).
8. Using an upside-down mug and a knife, round the edges of the puff pastry to form a "flower".
9. Fold the 8 puff pastry petals over the camembert. Brush with egg yolk using a brush.
10. Sprinkle with poppy seeds. Bake at 180°C for 25 minutes.
