Scrambled Eggs and Prosciutto Tartines

Instructions

  • 1.   Crack the eggs into a bowl.
  • 2.   Beat them into an omelette using a whisk.
  • 3.   Season with salt and pepper.
  • 4.   Melt a knob of butter in a small stainless steel saucepan and cook the eggs over medium heat, stirring constantly.
  • 5.   Remove from heat as soon as the eggs thicken.
  • 6.   Cut the prosciutto into 4 strips.
  • 7.   Place them on the slices of bread.
  • 8.   Spread the scrambled eggs evenly.
  • 9.   Serve the scrambled eggs and prosciutto tartines immediately, garnished with a sprig of thyme.
