Scrambled Eggs and Prosciutto Tartines

Instructions

. Crack the eggs into a bowl.

. Beat them into an omelette using a whisk.

. Season with salt and pepper.

. Melt a knob of butter in a small stainless steel saucepan and cook the eggs over medium heat, stirring constantly.

. Remove from heat as soon as the eggs thicken.

. Cut the prosciutto into 4 strips.

. Place them on the slices of bread.

. Spread the scrambled eggs evenly.

. Serve the scrambled eggs and prosciutto tartines immediately, garnished with a sprig of thyme.
