Oatmeal Chocolate Hazelnut Cookie

Instructions

  • 1.   Lightly blend the oat flakes and hazelnuts
  • 2.   Mix all the dry ingredients together
  • 3.   Add the lightly beaten eggs, oil, and hazelnut puree
  • 4.   Mix well
  • 5.   1st option: keep it as is for breakfast
  • 6.   2nd option:
    - Shape the dough into balls
    - Place them on a baking sheet lined with a silicone mat that is oven-safe
    - Slightly flatten the balls
    - Bake for 10-12 minutes
    - Let them cool on a wire rack

Ingredients for servings

  • 200 g of rice flour
  • 100 g of coconut sugar
  • 1 teaspoon of baking soda
  • 85 g of buckwheat flake
  • 100 g of chocolate chip
  • 50 g of hazelnut
  • 2 eggs
  • 50 g of olive oil
  • 60 g of hazelnut butter
