Apple - Cucumber - Salmon Pasta Salad

Instructions

  • 1.   Cook the pasta as usual.
  • 2.   Meanwhile, prepare the other ingredients:
  • 3.   Wash the cucumber and grate it with a large grater (if not available, cut it into small cubes). Let it drain in a colander.
  • 4.   Peel the apples and cut them into small pieces (personally, I cut them into eighths before making slices). Lightly squeeze lemon juice over them.
  • 5.   Finely chop the shallot.
  • 6.   In a salad bowl, mix the cream, the remaining lemon juice, and the shallot. Season with salt, pepper, and nutmeg.
  • 7.   Once the pasta is cooked, rinse it under cold water to cool it down before adding it to the salad bowl.
  • 8.   Add the cucumber (if it hasn't lost enough water, pat it dry with a paper towel beforehand), the salmon, and the Granny Smith apples.
  • 9.   Mix well and serve chilled.
