1. Cook the pasta as usual.
2. Meanwhile, prepare the other ingredients:
3. Wash the cucumber and grate it with a large grater (if not available, cut it into small cubes). Let it drain in a colander.
4. Peel the apples and cut them into small pieces (personally, I cut them into eighths before making slices). Lightly squeeze lemon juice over them.
5. Finely chop the shallot.
6. In a salad bowl, mix the cream, the remaining lemon juice, and the shallot. Season with salt, pepper, and nutmeg.
7. Once the pasta is cooked, rinse it under cold water to cool it down before adding it to the salad bowl.
8. Add the cucumber (if it hasn't lost enough water, pat it dry with a paper towel beforehand), the salmon, and the Granny Smith apples.
9. Mix well and serve chilled.
