Instructions

  • 1.   Cut the lemon in half. Wash and peel the eggplants and rub them with the lemon. Then cut them in half lengthwise and wrap them in plastic wrap. Cook them in the microwave for 6 to 7 minutes on high power. Remove the wrap (carefully) and blend the eggplants with salt, pepper, and 6 teaspoons of oil. Set aside in the refrigerator.
  • 2.   In a bowl, mix the ground meat with breadcrumbs, spices, chili, salt, and pepper. Add the coriander and onions. Mix well with your hands and form 12 meatballs.
  • 3.   Heat the remaining oil in a non-stick pan or on a griddle, and cook the meatballs for about 10 minutes, turning them regularly. Place them on a paper towel and then skewer them in pairs on a wooden skewer, alternating with basil and mint leaves. Serve with the eggplant caviar.

  • 600 g of Lamb shoulder
  • 1 tablespoon of breadcrumbs
  • 2 teaspoon of ground cumin
  • ½ teaspoon of cinnamon
  • 1 g of powdered chili
  • 100 g of chili pepper
  • 6 teaspoon of fresh coriander
  • 2 onions
  • 10 g of basil
  • 10 leaf of fresh mint
  • 1 pinch of salt
  • 1 pinch of pepper
