1. Cook the potatoes in their jackets the day before.
2. Peel and slice the potatoes. Slice the onion.
3. Heat the olive oil in a skillet and add the onion, cook until golden.
4. Add the duck gizzards and cook for a few minutes. Set aside.
5. Brown the potatoes in the same skillet.
6. Add the green beans, bacon, gizzards, and cook for 5 minutes.
7. Season with salt and pepper, and serve.
