1. Cook the potatoes in their jackets the day before.
2. Peel and cut the potatoes into slices. Chop the onion
3. Heat the olive oil in a sauté pan and add the onion, brown it.
4. Add the duck gizzards and heat for a few minutes. To book.
5. Brown the potatoes in the same skillet.
6. Add the beans, bacon, gizzards, heat for 5 minutes.
7. Salt, pepper and serve.
