Sweet Potato Curry and Coriander Velouté (68th meeting)

Instructions

  • 1.   Sauté the onion in oil for a few minutes.
  • 2.   Add the garlic, ginger, and curry powder. Stir.
  • 3.   Add the sweet potato pieces to this mixture.
  • 4.   Pour in the broth.
  • 5.   Bring to a boil, then simmer covered for 20 to 30 minutes (until the sweet potatoes are cooked, check with the tip of a knife).
  • 6.   Remove the pot from the heat.
  • 7.   Let it cool down a bit.
  • 8.   Blend.
  • 9.   Return to the heat.
  • 10.   Add the coconut milk and chopped coriander (save some for garnishing the bowls when serving).

  • 4 garlics
  • 1 tablespoon of curry powder
  • 1 liter of chicken broth
  • 40 cl of coconut milk
  • 1 teaspoon of ground coriander
  • 1 kg of sweet potato
