Instructions

  • 1.   Cut the chicken into pieces, brown it, season with salt and pepper, add the chopped vegetables, onion, and bouquet garni.
  • 2.   After 10 minutes of cooking, add broth. Cover and simmer for 45 minutes.
  • 3.   Remove the chicken pieces and vegetables. Keep warm.
  • 4.   Just before serving, thicken the sauce with heavy cream and egg yolks, and optionally with instant cornstarch.
  • 5.   Pour the sauce over the meat and sprinkle with parsley.
